Rice and Spinach Soup

  • 1/3 Cup brown rice
  • 1 qt boiling water
  • 2 tsp salt
  • 2 cups milk
  • 2 tbsp finely chopped onion
  • 1/4 lb raw spinach, finely cut
  • 2 tbsp margarine
  • paprika

Add rice to boiling salted water and cook uncovered until rice is thoroughly tender ( from 40 to 45 min ).

Add next four ingredients and simmer for 10 min. Serve at once with paprika on each bowl for garnish.
